01 - 1 large ripe avocado, peeled and pitted
02 - 1/2 cup melted coconut oil (or unsalted butter)
03 - 2 large eggs
04 - 1 teaspoon pure vanilla extract
→ Dry Ingredients
05 - 3/4 cup all-purpose flour
06 - 1/2 cup unsweetened cocoa powder
07 - 1 cup granulated sugar (or coconut sugar)
08 - 1/2 teaspoon baking powder
09 - 1/4 teaspoon salt
→ Add-Ins
10 - 1/2 cup dark chocolate chips (optional)
# Directions:
01 - Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
02 - In a blender or food processor, process the avocado until it achieves a completely smooth consistency.
03 - In a large mixing bowl, thoroughly whisk together the pureed avocado, melted coconut oil, eggs, and vanilla extract until well integrated.
04 - In a separate mixing bowl, sift together the all-purpose flour, unsweetened cocoa powder, granulated sugar, baking powder, and salt.
05 - Gently add the sifted dry ingredients to the wet mixture. Stir until just combined, being careful not to overmix.
06 - If using, fold the dark chocolate chips into the batter until evenly distributed.
07 - Pour the prepared batter into the lined or greased baking pan, spreading it evenly to create a smooth top surface.
08 - Bake for 22 to 25 minutes, or until a toothpick inserted into the center emerges with a few moist crumbs attached.
09 - Allow the baked brownies to cool completely in the pan before cutting them into your desired square portions.
