# Directions:
01 - Warm a non-stick skillet over medium heat and add butter or neutral oil.
02 - Lay one tortilla flat in the pan and distribute shredded cheese evenly over half.
03 - Top with desired fillings such as beans, corn, red bell pepper, spring onion, cilantro, or spices, then fold tortilla in half.
04 - Cook for 2 to 3 minutes per side, gently pressing with a spatula, until the surface is golden brown and the cheese has fully melted.
05 - Transfer to a cutting board, slice into wedges, and serve immediately with sour cream, salsa or pico de gallo, and guacamole or avocado.
