# Directions:
01 - Heat a splash of olive oil in a large soup pot over medium heat. Add ground beef and sausage; cook for 5 minutes, stirring often and breaking up the meat until well-browned.
02 - Add diced onion, garlic, carrot, and celery to the pot. Sauté for 5 to 7 minutes until vegetables soften and become fragrant.
03 - Stir in tomato paste, dried oregano, dried basil, chili flakes, salt, and black pepper. Cook for 1 minute until spices release their aroma.
04 - Pour in diced tomatoes and broth. Bring mixture to a boil, then lower to a gentle simmer.
05 - Add broken lasagne noodles and simmer for 10 to 12 minutes, stirring occasionally so the noodles do not stick, until pasta is al dente.
06 - Stir in chopped spinach and cook for 2 minutes, until wilted. Taste and adjust seasoning as required.
07 - Heat sesame oil in a small skillet over medium-high heat. Add chopped kimchi; sauté for 3 to 4 minutes until slightly crispy, then stir in toasted sesame seeds and remove from heat.
08 - Ladle hot soup into bowls. Top each serving with a spoonful of ricotta, a sprinkle of mozzarella and Parmesan, and a generous portion of kimchi crunch. Garnish with sliced spring onions.
