01 - 4 salmon fillets (approximately 5 ounces each), skinless or skin-on
02 - 2 tablespoons olive oil
03 - 2 tablespoons fresh lemon juice
04 - 1 teaspoon finely grated lemon zest

06 - 1 tablespoon fresh parsley, chopped
07 - 1 tablespoon fresh dill, chopped or 1 teaspoon dried dill

11 - 1 pound baby potatoes, halved

# Directions:

01 - Preheat oven to 425°F. Line a large sheet pan with parchment paper or lightly grease it.
02 - In a mixing bowl, toss halved baby potatoes with 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Arrange potatoes in a single layer on the prepared sheet pan and roast for 15 minutes.
03 - While potatoes roast, in a small bowl, combine remaining olive oil, lemon juice, lemon zest, minced garlic, parsley, dill, thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Pat salmon fillets dry and coat evenly with marinade.
04 - Once potatoes have roasted for 15 minutes, remove sheet pan from oven. Add red onion wedges, bell pepper slices, and trimmed green beans to the pan. Drizzle with remaining tablespoon olive oil, sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper, and toss to coat.
05 - Nestle marinated salmon fillets among the vegetables on the sheet pan, skin-side down if using skin-on.
06 - Return pan to oven and bake for 12 to 15 minutes, until salmon is just cooked through and vegetables are tender.
07 - For extra crispness, broil for 2 minutes to further brown the salmon and potatoes.
08 - Transfer salmon and vegetables to plates. Garnish with lemon wedges and extra chopped fresh herbs as desired. Serve immediately.
