# Components:
→ Noodles
01 - 10.5 ounces dried wheat noodles or ramen noodles
02 - Food coloring gels in pink, blue, yellow, and green shades
→ Cloud Sauce
03 - 0.85 cups whole milk or plant-based milk
04 - 4.2 ounces cream cheese or vegan alternative
05 - 1 tablespoon unsalted butter or vegan butter
06 - 2 tablespoons grated parmesan cheese or nutritional yeast
07 - 1 teaspoon cornstarch
08 - 1/4 teaspoon salt
09 - 1/4 teaspoon white pepper
→ Garnish
10 - 2 scallions, finely sliced
11 - 1 tablespoon toasted sesame seeds
12 - Edible flowers or microgreens, optional
# Directions:
01 - Bring a large pot of water to a boil, then divide it into separate heatproof bowls according to the number of colors you wish to use.
02 - Add a small amount of gel food coloring to each bowl and stir thoroughly to reach your desired vibrancy.
03 - Divide the noodles evenly and cook each portion in the colored boiling water for 2–3 minutes less than the package directions. Rinse noodles under cold water to halt cooking and set aside.
04 - In a saucepan over medium heat, melt the butter and add cream cheese. Stir continuously until the mixture becomes smooth.
05 - Whisk milk, parmesan cheese, cornstarch, salt, and white pepper into the saucepan. Cook, stirring constantly, until the sauce thickens and turns creamy, approximately 5 minutes.
06 - Fold the colored noodles gently into the sauce, aiming to keep colors separate or swirling for a marbled appearance.
07 - Serve immediately, topped with scallions, toasted sesame seeds, and optionally edible flowers or microgreens.
