  • Black or green tea bags (or loose-leaf tea): 8 tea bags or 2 tablespoons loose-leaf provides balanced tannin and flavor
  • Granulated sugar: 200 g (1 cup) to feed fermentation
  • Kombucha SCOBY or starter liquid: A SCOBY or 200 ml unflavored store-bought kombucha helps start fermentation
  • Flavoring Options: Choose 1-2 per batch; berries, citrus slices, ginger, mint or basil, fruit juice, dried hibiscus petals, cinnamon or cloves for creative customization

Recipe FAQ

How do I achieve good fizz in the drink?

Allow a short second fermentation in sealed bottles (1–3 days) after adding flavorings. This produces natural carbonation.

Can I use herbal teas instead of black or green tea?

Herbal teas may lack nutrients for fermentation, but blending with some black or green tea often works well for flavor.

How do I know when fermentation is complete?

Taste after 5 days; it's ready when tangy with mild fizz and not overly sour. Adjust based on sweetness and flavor preferences.

Is it necessary to refrigerate after fermentation?

Yes, refrigeration halts fermentation and maintains taste. Strain out solid flavorings before serving.

What are some creative flavor combinations?

Try ginger-lime, berry-mint, apple-cinnamon, or pomegranate-hibiscus for unique and refreshing taste profiles.

Is this suitable for a vegan or gluten-free diet?

Yes, it’s vegan and gluten-free if using certified gluten-free tea and appropriate flavorings.

Components

Kombucha-Style Base

01 2 quarts filtered water
02 8 black or green tea bags, or 2 tablespoons loose-leaf tea
03 1 cup granulated sugar
04 1 kombucha SCOBY or 3/4 cup unflavored store-bought kombucha as starter

Flavoring Options (select 1–2)

01 3.5 ounces fresh berries such as raspberries, blueberries, or strawberries
02 1 lemon or lime, thinly sliced
03 1 small knob fresh ginger, sliced
04 1 sprig fresh mint or basil
05 2 tablespoons fruit juice such as pomegranate, cherry, or apple
06 1 tablespoon dried hibiscus petals
07 1 cinnamon stick or 3–4 whole cloves

Directions

Phase 01

Brew the Tea: Bring 2 quarts filtered water to a boil. Add tea bags or loose-leaf tea and steep for 10 minutes. Remove tea bags or strain loose leaves.

Phase 02

Sweeten and Cool: Stir in granulated sugar while tea is hot until completely dissolved. Allow sweetened tea to cool to room temperature. Ensure liquid is not hot to preserve SCOBY viability.

Phase 03

Combine for Fermentation: Transfer cooled sweet tea to a large, sterilized glass jar. Add SCOBY along with starter liquid or store-bought kombucha.

Phase 04

Seal and Ferment: Cover jar with a clean cloth or paper towel secured by a rubber band. Store jar at stable room temperature, shielded from direct sunlight, for 5 to 7 days.

Phase 05

Monitor Fermentation: Begin tasting after 5 days. Continue daily until beverage develops a tangy, lightly effervescent profile. Avoid excessive sourness.

Phase 06

Remove SCOBY and Flavor: Extract SCOBY and reserve 3/4 cup kombucha for next fermentation. Introduce selected fruits, herbs, or spices into the brew.

Phase 07

Bottle for Carbonation: Fill sanitized glass bottles, leaving 1 inch of headspace. Seal bottles tightly and ferment at room temperature for 1 to 3 additional days to encourage carbonation.

Phase 08

Refrigerate and Serve: Once ideal carbonation is achieved, move bottles to the refrigerator. Strain out solid flavorings prior to serving.
