01 - 2 large boneless, skinless chicken breasts (about 14 oz), cut into bite-sized pieces

# Directions:
01 - Combine chicken pieces with olive oil, ground cumin, smoked paprika, salt, and black pepper in a medium bowl. Toss well to coat evenly; set aside to marinate while you prepare other ingredients.
02 - Heat 1 tablespoon olive oil in a large skillet or sauté pan over medium-high heat. Add marinated chicken and sear for 5 to 6 minutes, turning occasionally, until golden and cooked through. Transfer chicken to a bowl and cover to keep warm.
03 - In the same pan, add diced red onion and bell pepper. Sauté for 2 to 3 minutes or until beginning to soften. Stir in minced garlic and cook for another 30 seconds, just until fragrant.
04 - Add rinsed jasmine rice to the pan and stir to coat with the vegetables and oil. Pour in chicken broth, increase heat until broth begins to boil, then reduce heat to low. Cover with a lid and simmer for 15 to 18 minutes, until rice is tender and broth is absorbed.
05 - Turn off the heat. Use a fork to fluff the rice, then gently fold in cooked chicken, diced mango, chopped cilantro, lime zest, and lime juice. Season with additional salt and pepper to taste.
06 - Cover the pan and let rest for 5 minutes to meld flavors. Garnish with extra cilantro and sliced scallions if desired. Serve immediately while warm.
