01 - 12 oz penne pasta

02 - 12 oz smoked sausage (andouille or kielbasa), sliced into 1/4-inch rounds

03 - 1 small yellow onion, finely chopped
04 - 1 red bell pepper, diced
05 - 2 cloves garlic, minced

06 - 2 tbsp unsalted butter
07 - 1 1/2 cups heavy cream
08 - 1 cup freshly grated Parmesan cheese
09 - 1 tsp Cajun seasoning, plus more to taste
10 - 1/4 tsp black pepper
11 - 1/4 tsp smoked paprika (optional)

# Directions:
01 - Cook penne pasta in salted boiling water according to package directions until al dente. Drain and set aside.
02 - Heat a large skillet over medium-high heat. Add smoked sausage slices and cook 3 to 4 minutes until browned. Remove from skillet and set aside.
03 - In the same skillet, melt butter. Sauté onion and red bell pepper for 2 to 3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
04 - Stir in heavy cream, Cajun seasoning, black pepper, and smoked paprika. Bring mixture to a gentle simmer.
