# Directions:

01 - Heat olive oil in a large skillet over medium heat. Add the onion and cook for 3 to 4 minutes until soft and translucent.

03 - Stir in rinsed rice and toast for 1 to 2 minutes until edges turn slightly translucent.
04 - Add diced tomatoes with juices, vegetable broth, salt, pepper, and oregano. Stir thoroughly to combine.
05 - Bring to a boil, then reduce heat to low. Cover and simmer for 18 to 20 minutes until the rice is tender and liquid is absorbed.
