A whimsical quick bread combining the sweet spice of churros with creamy sweet potato, featuring a cinnamon-sugar swirl and a crunchy topping—a deliciously chaotic treat for breakfast or dessert.

I first baked this bread for a weekend brunch after craving both churros and classic sweet potato bread. The cheerful swirl and sugary top quickly made it the most requested treat among friends.

  • Sweet Potato Base: 1 cup (240 g) cooked, mashed sweet potato (about 1 large, skin removed), 2/3 cup (135 g) granulated sugar, 1/2 cup (120 ml) vegetable oil, 2 large eggs, 1/4 cup (60 ml) milk, 1 tsp vanilla extract
  • Dry Ingredients: 1 3/4 cups (220 g) all-purpose flour, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1 1/2 tsp ground cinnamon, 1/4 tsp ground nutmeg

How do I get a perfect cinnamon-sugar swirl?

Sprinkle the cinnamon-sugar mixture between layers and use a knife to gently swirl for a marbled effect before baking.

Are there nut-free options?

The bread is delicious as-is, but if you want to avoid nuts, simply omit the optional pecans or walnuts from the batter.

Can milk be replaced for dietary needs?

Milk can easily be swapped for non-dairy alternatives such as almond or oat milk without affecting the bread's texture.

What is the best way to serve this bread?

Enjoy slices warm, optionally topped with caramel sauce, ice cream, or simply on their own for breakfast or dessert.

How do I know when it's baked through?
